Carrot Salad

Ingredients

    3 cups grated carrots
    1 tsp parsley
    1 Tbsp lemon juice
    1 Tbsp vinegar
    1 Tbsp canola oil
    1 tsp sugar
    1/4 tsp dry mustard
    salt & pepper to taste

Directions

1. In a medium bowl, combine carrots & parsley.
2. In a separate bowl, combine the lemon juice, vinegar, oil, mustard, salt & pepper. Mix well.
3. Pour dressing over carrots & parsley. Toss to coat.
4. Cover & refridgerate. Serve cold.

Makes 4 servings.

    Very good, has a nice bite to it. I made these changes: 1) 2 tsp of dried parsley instead of 1 tsp 2) I didn't use salt - 7/22/09
