Authentic GuacamoleSubmitted by: MILLE0320
IntroductionThis is the guacamole my Ecuadorian host mother taught me to make. Even my Ecuadorian friends raved about it. It's simple, and easy and so good! 3 ripe avacados (they should be quite soft when you squish them)
1 medium tomato, chopped
1 small-medium white onion, finely chopped
1 lime, for the juice
salt, to taste
mash the avacado with a fork unti it has the consistency of a dip
add the chopped tomato, some of the chopped onion (depending on the size and yield of the avacados), salt, and squeeze a thick slice of the lime into the bowl
mix the ingredients and taste, you may need to add more salt or lime juice
makes guacamole for 4-5 people
*hint-if you're making the dip ahead of time, leave the avacado pits in the guacamole, which prevents it from turning brown while it sits
**hint-if the guacamole has some brown spots it hasn't gone bad, it's like the brown on an apple. just add some lime juice and stir.
Number of Servings: 1
