Introduction

Quick and easy healthy and clean pancakes that taste totally indulgent! Top with your favorite fruit, spreads, nuts or nut butters for extra carbs and fat!

Quick and easy healthy and clean pancakes that taste totally indulgent! Top with your favorite fruit, spreads, nuts or nut butters for extra carbs and fat!


Number of Servings: 3

Ingredients

    1/2 cup oats
    1/2 cup fat free egg beaters or egg white equivalent
    1/2 cup fresh blueberries
    1 tablespoon honey
    Stevia (optional)


Tips

Perfect for before or after a run and convenient enough even to take on a long run or ride. They still taste great eaten cold.


Directions

Place mix all ingredients in small bowl and blend using a stick blender or can be made in a food processor or stand blender. Mix only until berries slightly broken--2-3 pulses should be sufficient.


Let stand 5- 10 minutes to thicken!!! Can be made the night before and cooked in the morning!!!



Spray a non stick pan with non stick spray and heat before adding batter!!! Divide evenly into 3 pancake and cook throughly before attempting to turn!!! Cook evenly on both sides and cook even golden brown!!!



Top with favorite fruit, nuts or additional honey or maple syrup!!!



Make several batches and keep them in the freezer!!! Heat as needed!!!

    I used this recipe as a way to make wheat free crust for pizza. Just 2 eggs and 1/2 cup of oatmeal. Spread out thin in a small frying pan after a spray of canola oil. This is enough to make 2 individuals pizzas where you can put on pizza sauce and toppings of choice. - 2/27/11

    I thought these were great. I only made two tiny changes. I used maple syrup instead of honey, just because I like the taste better and I added a pinch of baking powder because I like fluffier pancakes. I will be making these again as they taste really decadent with a tablespoon of maple syrup. - 5/26/09

    I made these for myself and my five year old daughter (tough critic!). I omitted the honey from the batter, added a pinch of backing powder and a tsp of vanilla extract. My dtr LOVED them and said YUMMY the entire time she was eating. I also sub'd the blueberries for an organic 3 berry blend I had. - 8/27/09

    Very tasty! Simple and quick recipe. I added 1/4 tsp of baking powder, a dash of cinnamon and used two whole eggsand maple syrup as suggested by others. Added a 5 walnuts to the batter with the fruit. Yielded three pancakes. Excellent after a morning run. - 8/15/11

    Thanks for this idea, I would have never thought about it. I changed this recipe slightly to lower the calories even more. I used 1 tbsp of sugar free syrup instead of honey which is only 10 calories instead of 60. I didn't use any blueberries in mine so the entire batch was 220 cals! - 1/26/11

    I mixed it up the night before and it was great the next morning! I did use maple syrup instead (my uncle makes his own so I want to use it any chance I get). I also used frozen blueberries (it's what I had) and they were still good. Would make them again.! - 5/12/11

    Do this, but add 1/2 cup low fat cottage cheese. Sounds a little crazy but makes them a little fluffy and adds protein. Just cook slower.

    Also, use a real egg. Come one, the yolks the healthiest part unless you have a serious problem with too much fat in the rest of your day - 9/5/13

    This recipe was a huge success this morning! Thanks for sharing. I replaced honey with Maple syrup in the recipe. So easy and really yummy. The entire family loved it. Tends to burn a little quicker than usual pancake batter so make sure to check regularly. - 8/15/10

    An interesting and healthy twist on pancakes. I like the texture the oats add. I made a few changes - omitted the honey, used 2 whole eggs instead of whites, pulsed the oats and eggs in the blender a few times first and then added the blueberries and pulsed a couple more times. - 7/11/10

    I made these this morning and they were great! It took 3 egg whites to make 1/2 cup, but next time, I'll just use 2 eggs. I used raspberries as I had those. Very dense, but I liked that. Ate them plain. AWESOME. - 5/15/11

    Hey Jackie! I made these today and I was very pleasantly surprised how tasty they were! Altho I used 2 whole eggs instead and 1/2 a banana with 1/4 c blueberries (all I had), they were delicious! - 6/20/09

    You can add 1/2 cup cottage cheese to these (make sure you blend all ingredients) to up your protein.Make sure to add the calories to your tracker. You can also make with little cinnamon and vanilla and top with a splash of lemon juice and sprinkle of powder sugar. YUM! - 9/5/13

    I love this recipe! This is now my "go-to" breakfast pancake. I also throw a few walnut pieces in for some crunch and walnuts are a healthy fat. I don't add any syrups or anything on top cause I love the taste as is. - 9/5/13

  • I tried this recipe twice already, but it came out dry the first time, so,added 1 tsp of canola oil + 1/4 tsp of baking soda to mix, used quick cooking Quaker oats- pulsed a few times in the blender to make it more flour like, and added blueberries after pouring batter on pan. Kept me full for 5 hrs - 5/7/14

  • I read the comments and added 1/4 tsp baking soda, and used one egg whole and one white, just 1/2 cup. For some reason I forgot the honey, but didn't miss it at all, I think next time I will add a dash of nutmeg and cinnamon. They were very good and satisfying, calories as I made them were 94. - 5/4/14

  • Really impressed! Wasn't sure if I would like this but I did and so did my husband who is not so into healthy food usually. I took the advice of others and added a pinch of baking soda. I also added some cinnamon. I will definitely make again. In my opinion the recipe makes two pancakes not three. - 5/12/13

  • Delicious! I added 2 tbsp chopped walnuts, soaked in 2 Tbsp milk overnight.

    Also works to use 1 egg plus 1/4 cup ff Greek yogurt, add a pinch of baking powder and the juice of half a small lemon. Just under 300 cal. for the entire recipe. - 4/27/13

    I make pancakes similar to this a few times a week. I use 1/2 cup oats, 2 egg whites, tbsp of cottage cheese and a handful of blueberries. Sometimes top with a banana and/or a little agave when done. Keeps me going all morning! - 4/27/13

  • I used the suggestions from other Sparkers and added a pinch of baking soda,vanilla, and cinnamon. I also ground my original Quaker oats in the blender because I didn't have instant. The flavor was good, but the texture is very dense - Don't expect a light fluffy pancake! - 6/24/12

  • OMG YUM! I didn't have any blueberries so I used a banana instead, added some cinnamon and vanilla extract, no honey or stevia but a dash of maple sugar instead. SO DELICIOUS! I can have pancakes without feeling like I need to exercise for an extra hour!
