Pear Butter

Ingredients

    7-8 pears, peeled, cored, and chopped
    3/4 cup white sugar (or substitute)
    1/4 cup brown sugar (or substitute)
    1 tsp cinnamon
    nutmeg and ginger to taste if desired

Directions

Cook pears in water until tender. Drain pears, reserving a small amount of the water they were cooked in. Process pears into pulp in blender or food processor.

Disolove sugars in a small amount of the cooking water (1/4 cup should be plenty) and heat, stirring constantly until sugar is disolved and liquid is syrupy. And pear pulp and cook on low for about 15 minutes, stirring frequently. Pour into glass or plastic container, let cool, and store in refrigerator.

Makes about 1 quart, or 32 servings of 2 TBS each.
