Lo's Luscious Dairy-Free Chicken Veggie Casserole

Introduction

Ingredients

    I like to sprinkle in a little dry mustard, too, into the "cheese" sauce.

Directions

1. Preheat the oven to 350.
2. Cook and drain the pasta to al dente (not quite all the way done).
3. Cut the chicken breast into small chunks (about 1").
4. In very large saute or frittata pan, saute the onions and celery in the olive oil. (This pan will end up holding the entire casserole contents eventually.) :)
5. Add chicken pieces to onion mixture and saute a few more minutes until chicken is about halfway cooked through. It will finish cooking in the oven.
6. Add chopped frozen broccoli to the chicken mixture, saute for 2 more minutes, and then turn off heat (broccoli will cook in oven).
7. Add cooked pasta to chicken mixture.
8. In pasta pot, melt 1 T SmartBalance margarine and then whisk in 2 T flour to make roux. Quickly also whisk in chicken broth and continue whisking to thicken. Finally, whisk in 3 slices Swiss flavor soy cheese. (Really, any flavor soy cheese -- or regular dairy cheese if you're not milk-sensitive -- will work here.) Add this "cheese" sauce to the chicken mixture.
9. Add all remaining seasonings and stir all ingredients together.
10. Transfer to a 9x12 Pyrex casserole dish sprayed with Pam.
11. Top with bag of Veggie Shreds soy cheese (whatever flavor you like), the chopped pecans, and then spray the whole top with Pam (helps the pecans brown).
12. Bake in 350-degree oven for 20 minutes.
13. Enjoy. (And if you need to get kids to eat this, I recommend more cheese.) :)
