Ingredients

    CRUST
    1 1/2 c. shredded zucchini
    1 lg. egg white
    3 oz. part skim Mozzarella cheese shredded
    1 T parmesan cheese
    1 t salt
    1 T dried basil
    1 T paprika

    QUICHE
    2 lg eggs
    4 lg egg whites
    15.75 oz can pink salmon
    1 med. banna pepper chopped
    1/4 c. green bell pepper chopped
    1/4 c. red bell pepper chopped
    1/4 c. onion chopped
    1 T. dried rosemary
    2 T. parmesan cheese shredded

Directions

Preheat oven to 400 F

Spray 9" pie plate with cooking spray

Shred Zucchini and Mozzarella, combine the
first 7 ingrediants and press into pie plate to form crust. Bake for 15 min.

Beat egg whites till fulffy, beat eggs then fold into the egg white, fold in peppers, onion rosemary and salmon.

Sprinkle remaing parmesan cheese on top.

When crust comes out of the oven, reduce heat to 375.

Pour Egg mixture into crust, bake 30 to 40 minutes, until quiche is set.
