Potato Leek and Onion Soup

Number of Servings: 10

Ingredients

    5 Tbsp Olive Oil
    3 large leeks, chopped
    1 large onion, chopped
    6 large potatoes, cubbed
    5 cups vegetable Broth
    Seasoning salt to taste

Directions

1. Chop all veggies
2. Warm olive oil in stock pot
3. Add leeks and onion and stir to coat with olive oil for 6-8 minutes until tender
4. Add potatoes and broth and seasoning salt
5. Bring to a boil and simmer for 20-30 minutes, until potatoes are cooked through
6. Puree and serve

*** Makes 10 - one cup servings
