Pumpkin Oat Bars

Introduction

Yummy pumpkin oat bars with a hint of sweetness and a little pecan crunch. These freeze well, too! Yummy pumpkin oat bars with a hint of sweetness and a little pecan crunch. These freeze well, too!
Number of Servings: 16

Ingredients

    1 can (15 oz.) pumpkin puree
    1 1/2 c. quick oats
    1/2 c. Bisquick (or other baking mix)
    1/2 c. golden raisins
    1/2 c. pitted prunes
    1 medium egg
    1/3 c. light brown sugar
    1/2 c. pecans
    1 tbsp. cinnamon
    1 tbsp. pumpkin pie spice
    2 tbsp. honey

Directions

Preheat oven to 400 degrees. Mix all ingredients together. Line an 8" X 12" pan with tin foil (for easy clean up) and spray lightly with cooking spray. Spread mixture into pan. Bake 18-20 minutes. It should feel slightly firm but not sticky to the touch. After the mix cools, pick it up out of pan holding the sides of foil. Cut into 16 bars. Freeze remaining bars for a quick snack later.
