Vegan Tofu Scramble Vegan Tofu Scramble
Number of Servings: 1

Ingredients

    One serving Soft Tofu
    1/4 cup mushrooms cut into pieces
    1/4 cup canned diced tomatoes with seasoning added
    1/4 cup Carrots, julienne or shredded
    Extra Virgin Olive Oil

    **Season with Basil and Oregano, Salt and Pepper, if desired

Directions

Add olive oil to skillet over medium heat. Add tofu and scramble. Add seasonings, desired. Add mushrooms, carrots, tomatoes, and any other ingredient desired. Cook until tofu is heated thru.

Serves one.
