Introduction

Number of Servings: 8

Ingredients

    Olive Oil, 1 tbsp
    Onions, raw, 1.5 cup, chopped
    Garlic, 1 tsp minced
    Pepper, red or cayenne, 1/8 tsp
    Salt, 1 dash
    Egg, fresh, 6 large
    Polska Kielbasa, chopped 4 oz
    Sweet Corn, Fresh, .1/2 cup
    Mushrooms, fresh, 4 0z pieces or slices
    Spinach, fresh, 1 cup
    Artichokes 9 oz
    Buttermilk, lowfat, .2/3 Cup
    Mozzarella Cheese, part skim milk, 8 oz

Directions

Preheat oven to 350

1. In a oven safe skillet add olive oil garlic and onions saute until soft.

2. In a large bowl add all other ingredients except for cheese.

3. Add onion and garlic to bowl and mix well.

4. Then put mix back in the skillet and on medium heat on the stove until it sets. (about 10 minutes)

5. Put skillet in oven and bake until top is golden brown and middle is sets (test center with toothpick)

Enjoy!

Makes 8 wedge size servings
