Banana Oat Muffins with Splenda

Introduction

Old family favourite but I replaced the white sugar with white Splenda (blend for baking) - they freeze well. You can also add 1/2 cup chopped nuts but don't forget to adjust the nutritional informaton. Number of Servings: 12

Ingredients

    1 cup All-purpose white flour
    1 cup rolled oats
    2/3 cup Splenda (white, blend for baking)
    1.5 tsp baking power
    1 tsp baking soda
    1/2 tsp salt
    1 egg
    2 cups mashed banana (5 - 6 bananas)
    1/3 cup melted Becel original margarine
    12 paper muffin liners


Directions

Makes 12 muffins. Preheat oven to 375 degrees faranheit.

Combine flour, oats, sugar, baking powder, baking soda, and salt in mixing bowl. Mix well.

Beat egg, banana and melted butter together until smooth.

Add banana mixture to dry ingredients.

Stir until moistened. Do not overmix. (this is where you would stir in the optional nuts).

Fill lined muffin cups 3/4 full.

Bake at 375 degrees faranheit for 20-25 minutes, or until top springs back when lightly touched.
