Introduction

Number of Servings: 16

Ingredients

    Celery, raw, 3 cups, diced
    Onions, raw, .75 cup, chopped
    Broccoli, fresh, 2 cups, chopped
    Cauliflower, raw, 2 cups
    Green Beans (snap), 4 cups
    Canned Tomatoes, 3.5 cups (2 cans)
    Cabbage, fresh, 4 cups, chopped
    Water, 4 cups
    Broth 99% Fat Free, 3 cups
    Garlic, 1 T minced (or to taste)
    Salt, 2 tsp. (or to taste)
    Pepper, black, .5 tsp (or to taste)

Directions

Place everything but the cabbage into a very large pot. Bring to a boil. Reduced heat and simmer, covered, until vegetables are tender (about 1 hour). Add cabbage during the last 10 minutes of cooking.

Makes 16 one-cup servings. Freezes well.

You can puree this soup in a blender for a satisfying creamy version.

You can add cooked chicken or turkey to individual servings to increase the protein, and make this a hearty main-dish soup.
