Smoky Turkey Shepherd's Pie

Introduction

Borrowed from Rachel Ray. Supposed to make only 4 servings but they are HUGE! I made it 8 servings, subbed nonfat sour cream for regular and turkey bacon for regular. Ingredients

    3 large Idaho potatoes
    1 lb ground turkey
    2 T extra virgin olive oil
    1/4 lb. turkey bacon
    1 T smoked paprika
    2 T thyme
    1 medium onion
    2 carrots, diced
    3 celery stalks
    1 small red pepper
    2 C frozen peas
    2 T all purpose flour
    2 C chicken stock
    1 C light or nonfat sour cream
    1 large egg
    3 T unsalted butter

Directions

Makes 8 servings. Preheat broiler to high. Boil potatoes. While potatoes are boiling heat deep large skillet to medium. Brown bacon and turkey. Add seasoning once meat is browned, then add onions, celery and carrots. Cook for 5 minutes stirring occasionally. Add peppers and peas and cook for another 2 minutes. Stir in flour cook for 2 more minutes. Add stock, stir in 1/2 cup of sour cream and simmer over low heat.

When potatoes are tender, add a ladel of the cooking water to the egg and then drain the potatoes. Add remaining 1/2 cup of sour cream, butter, salt and pepper. Mash and then add the egg. Pour turkey mixture into medium casserole dish, top with mashed potato mixture and spread evenly. Broil until potatoes are golden at the edges.
