Lighter Version of Chicken Alfredo

Introduction

I lightened up this recipe from another SparkPeople recipe, and it turned out FANTASTIC!!! Low calories, big flavor.

This could also easily be cooked on the stove top rather than in the crock pot.

Number of Servings: 6

Ingredients

    4 boneless chicken breasts
    2 cups water + 2 chicken bullion cubes
    1/2 cup skim milk
    2 tbsp. cornstarch
    4 oz. fat free cream cheese
    4 oz. fat free plain yogurt
    1 tbsp. galic, pressed
    1/4 cup onion, diced
    1 tbsp. olive oil
    Salt & Pepper to taste

Directions

In a small sauce pan on medium heat, combine olive oil, garlic and onion, sautee for 2-3 minutes. Then add chicken broth and bring to a boil. In a shaker, mix milk and cornstarch and shake until blended. Now whisk in cornstarch mixture to the boiling broth, whisking until it starts to thicken. Take off heat and stir in cream cheese and yogurt then set aside.
Spray inside of crockpot with vegetable spray. Lay chicken breasts on bottom and then season with salt and pepper. Pour alfredo sauce over top of chicken and cook on low for 6 hours.

Serve with noodles or with garlic mashed potatoes. Also add your favorite veggies to the sauce (carrots, zucchini, broccoli, peas, etc) for more flavor and nutrition. (calories not included in this recipe)
