1/2 tsp cumin (ground)
4 rashers thin bacon
8 fresh basil leaves
splash of red wine
300gms penne pasta
1/2 cup grated parmesan cheese
salt & black pepper to taste
If bacon sticks, add a little water. Keep stirring.
Add tin of tomatoes.
Mash with potato masher. Add the ground cumin, as well as the splash of red wine.
Also add chopped fresh basil.
Simmer for approximately 30 minutes.
In the meantime, cook penne as per the package instructions.
When all cooked, toss together.
Add salt and ground black pepper to taste.
Sprinkle grated/shaved parmesan cheese.
Enjoy with green garden salad & some crusty bread stick (but don't forget to add the extra points/calories, etc).
