Baked Quinoa

Introduction

This is a nice side dish to serve with literally any meat. It's easy to make variations as well. This is a nice side dish to serve with literally any meat. It's easy to make variations as well.
Number of Servings: 3

Ingredients

    6 crackers crushed - Town House Reduced Fat
    1.5 cups of precooked quinoa
    1/4 cup southwestern Egg Beaters
    3 cloves garlic chopped or crushed
    3/4 cups chopped onion
    1/4 tsp salt
    pepper to taste
    1 cup Iceberg Lettuce

Directions

In a large bowl, mix together all ingredients except the lettuce. Pour into a baking dish sprayed with olive oil spray. Bake at 400 degrees for 15 minutes.

Remove from oven, toss quinoa with the lettuce. Serve.
