Ingredients

    3/4 cup Brown Sugar, packed
    3/4 cup Splenda
    1 cup pumpkin puree, cooked or canned
    2/3 cup non fat plain yogurt
    1/3 cup applesauce or mashed banana
    2 eggs
    1/4 cup water
    1 cup all-purpose flour
    1 cup whole wheat flour
    1 tsp. baking soda
    1/2 tsp. salt
    1/2 tsp. nutmeg, ground
    1/2 tsp. cinnamon, ground
    1/4 tsp. ginger, ground
    3/4 cup raisins (optional)
    1/2 cup walnuts or pecans, chopped


Directions

Instructions:
Preheat oven to 350°F. Grease 9x5x3-inch loaf pan. In large bowl combine sugar, Splenda, pumpkin, applesauce, yogurt, eggs and water; blend well. Combine flours, soda, salt, nutmeg, cinnamon and ginger; stir into pumpkin mixture. Stir in raisins and nuts. Scrape into loaf pan. Bake 45 to 55 minutes or until toothpick inserted in center comes out clean. Remove from pan; cool on rack.

Serving Size: Makes 1 loaf, about 16 slices
