One-Skillet Omelet

Introduction

This is a HUGE Omelet for anyone who likes to fuel themselves to have a great morning! This is a HUGE Omelet for anyone who likes to fuel themselves to have a great morning!
Number of Servings: 1

Ingredients

    2 large mushrooms, chopped
    1/4 of a red bell pepper, seeded and chopped
    1 medium slice of red onion, chopped
    1 scallion, chopped
    4 egg whites (or 1/2 cup egg substitute), slightly beaten
    1/2 ounce each part skim mozzarella and provolone cheese

Directions

Preheat your oven's broiler

Heat a small, oven safe skillet and sautee mushrooms and peppers, when almost done, add red onions. When all the veggies are cooked through, toss in your scallions, then remove from the skillet and set aside

Spray your pan with non-fat cooking sptay, and add to it your egg whites, cook util almost set and add the veggies back to the pan, on one half of omelet only.

Fold the other side over and cover with your shredded cheeses, and pop it in the oven under the broiler until melted and golden.

enjoy with a two slices of weight watcher's toast or bagel (not included in calorie count)
