Taco Soup

Introduction

Number of Servings: 10

Ingredients

    2 lbs Extra Lean Ground Beef, browned and drain fat
    1 lg. Bell Pepper and 1 Lg Onion, chopped and brown with meat
    1 Pkg Ranch dressing
    2 Pkgs Low Sodium Taco Seasoning Mix
    2 Cans Each: Corn, Ranch Beans, Diced Tomatoes
    1 Can Ro-Tel
    2 Cups Water

    1 pkg Taco Chips, if desired (not included in calorie count)

Directions

Brown beef and onion and pepper. (I use a bag of Birds Eye 3 pepper blend) While this is browning mix other ingredients in a large soup pot. Drain beef and add to pot. Stir and summer 10 minutes until hot.
You can add shredded cheese on top, taco chips, even sour cream but these are extra calories
NOTE: Sodium levels are high. You can reduce sodium by using no salt addded tomatoes, corn and dressing mix.
