ATK WHITE CHILI

Ingredients

    2 chicken breast with bone no skin
    1 chicken breast with skin no bone
    plus cooking spray
    3 anaheim chiles ( same as green chile fresh)chopped
    3 poblano chile chopped
    1 meduim & 1 small Jalapeno seed and rib removed if prefer not so hot
    2 meduim onion minced
    6 cloves garlic pressed or minced
    2 tblsp cumin ground
    2 tblsp oregano
    8 cups 99% fat free low sodium chicken broth
    2 15 oz cans white beans drained and rinsed
    1/4 cup Lime juice (2-3 limes)
    1/4 cup cilantro minced
    4 green onions sliced thin

Directions

Heat oil in pan and spray with cooking spray add chicken and lightly brown on both sides remove aset aside -remove skin from the chicken with the skin

spray wtih addition cooking spray and add anaheim, meduim jalapeno poblano chile onion cumin oregano and 1 tsp salt saute cover and cook meduim low heat until vegetables soften. transfer 1/2 mixture to a plate set aside

add chicken broth chicken still on bone and beans bring to boil reduce heat and simmer until chicken tender

remove chicken let cool to handle shredd and add back to pot throw bones away no longer need them

add reserved chili mixture lime juice cilantro green onions and small jalapeno season with salt and pepper to taste

serves 1 1/2 cup each
