Turkey Mushroom Soup

Introduction

Great for that leftover turkey. Adapted from Duke University Book of Diet and Fitness. I keep leftover turkey and rice in zip lock bags in my freezer to cut down on the prep time. Ingredients

    2 Tbsp. margarine, butter or smart balance
    1 qt. mushrooms
    1/2 c. chopped onion
    1/2 c. chopped celery
    1/2 c. chopped carrot
    2 cloves garlic, minced
    2 tsp. all-purpose flour
    1/4 tsp. salt
    1/8 tsp. dried thyme
    1/8 tsp. marjoram
    1/2 c. skimn milk
    1 egg yolk, slightly beaten
    1 1/4 c. low sodium chicken borth or 1 10.5 oz. can
    1 c. cooked skinless turkey, cubed
    1/3 c. cooked rice, white, brown or wild, whichever you prefer (cooked without salt or fat)
    1 Tbsp. diced pimiento

Directions

saute mushrooms, onion, celery, carrots and garlic in heated margarine over medium heat. Add flour, thyme, marjoram and stir well. Add milk, egg yolk and chicken broth and stir well. Add remaining ingreadients and cook gently until broth slightly thickens. Do not allow to boil.
