Pineapple Stuffed Acorn Squash ~ Suzy's

    * 1-acorn squash
    * 1/4-cup Butter Buds - Reconstituted
    * 1-cup crushed pineapple, undrained
    * 1/2-tsp allspice
    * 1/4-cup raisins
    * 1/2-cup splenda - measurable
    * 2-tbsp pecan meal


(1) Preheat oven to 350-degrees.
(2) Cut the squash in half and cut out the seeds.
(3) Place each half, cut-side down, in a baking dish.
(4) Cover dish and bake 45-60 minutes or until the squash is tender and soft.
(5) While the squash is baking, combine the remainder of the ingredients (except the pecans) together.
(6) When the squash is baked, remove from the oven and set aside to cool for 10 minutes.
(7) Turn squash halves over and fill each with half of the pineapple mixture and sprinkle each half with 1-tbsp of pecan meal.
(8) Place back in the oven and bake for another 10-minutes or until the pineapple mixture is hot and bubbly.


YIELDS: 4-servings (1/2-squash per serving)
