Ingredients

    * Spinach, frozen, 2 package (10 oz) yields
    * *Extra Virgin Olive Oil, 2 tbsp (
    * Becel Margarine (non-hydrogenated), 3 tsp
    * Yellow Cornmeal, 1 tsp
    * Ground beef, extra lean, 1 lb
    * 1/4 Lg Red onion, chopped
    * Garlic, 3 cloves, minced
    * Salt, 1 tsp (divided)
    * Pepper, black, 0.5 tsp
    * Feta Cheese, 0.5 cup, crumbled
    * Mozzarella Cheese, part skim milk 2 cups
    * Roasted Red Peppers, 2 peppers diced
    * Pizza dough (home made or store bought)

Directions

1. Preheat oven to 425F
2. Thaw 2 boxes of chopped frozen spinach in microwave and squeeze out in a towel.
3. Put 2 tbsp olive oil and 1 tbsp butter in a nonstick skillet and heat. Sprinkle cornmeal on pizza pan. Spread dough on pizza pan. Prick top w/ fork and drizzle with olive oil and sprinkle with salt. Sprinkle with seasonings of choice (oregano, garlic powder, etc) and put in oven. Cook 10min.
4. Add ground beef to pan. Brown and break up. Chop up red onion and add to pan, along with minced garlic. (Push beef to the outside of the pan and cook onion and garlic in the middle). Season with grill seasoning and salt & pepper.
5. Remove pizza from oven. Add spinach to pan and separate. Stir in and warm though. Transfer spinach mixture to crust. Top with feta cheese and mozza. Dice roasted red peppers. Toss on top and add olives if using. Put back in oven and melt cheese.
