Berry Bread Pudding

Introduction

I'm trying this out tonight! Some yummy comfort food to go with the chicken soup I'm making for dinner. :) Can use leftovers as breakfast!! I'm trying this out tonight! Some yummy comfort food to go with the chicken soup I'm making for dinner. :) Can use leftovers as breakfast!!
Number of Servings: 8

Ingredients

    10 slices white bread, cubed
    8 large eggs
    1 cup fresh strawberries
    1/2 cup frozen blueberries (you can use any combination of fresh or frozen berries of whatever kind)
    1 cup milk (I'm using skim Mootopia from HEB)
    2 tsp cinnamon
    1 tsp vanilla extract
    1/2 cup sugar
    1 pinch salt
    1/2 cup brown sugar
    1/4 cup butter

Directions

1. Preheat oven to 350 degrees.
2. Grease a 9x13 pan with nonstick cooking spray.
3. Mix your eggs, milk, sugar, cinnamon, vanilla, and salt together in a large bowl.
4. Add bread and mix thoroughly, moistening all of the bread.
5. Add berries to the mix and pour into the 9x13 pan.
6. Sprinkle your brown sugar over the top of the mixture and melt your butter & drizzle it over the top.
7. Bake approximately 45 minutes.

Makes 8 servings. Delicious with Fat Free Cool Whip on top! (Not included in nutritionals)

  • Sounds like this would be yummy.
    I would maybe try eggbeaters, splenda white sugar substitute, and splenda brown sugar substitute to condense the calories and even the fat down some.
    I would also replace the butter with I can't believe it's not butter spray. that has 0 cal/0 fat..

    Thanks for the suggestions! I agree that it could be tweaked some! I made it this way because I had some cals to eat left in my day and was wanting something "naughty" anyway. ;) It was very delicious, but I could also see it being FABULOUS with your suggestions!!!
