• 1 can tuna packed in water, drained
• 1 large tomato, hollowed, reserving inner meat
• ½ cucumber, chopped fine
1 stalk celery, chopped fine
• 1 hard-boiled egg, finely chopped
• ¼ cup salsa from above recipe
• Chopped fresh parsley
Roughly chop tomato meat scooped from inside of tomato. In a mixing bowl with lid, combine all ingredients except tomato shell. Mix well. Scoop tuna into tomato until full. Enjoy!
Suggestions: can also be served in hollowed bell pepper, on celery, in a romaine lettuce wrap, or in pita. If you like a creamier texture, try a small amount fat-free sour cream or low-fat or fat-free mayo.
