Pumpkin muffins

Number of Servings: 24

Ingredients

    1 White, Yellow or Spice cake mix, dry (look for the lowest calories)
    1 can (15oz) Libby's canned pumpkin
    1 tsp pumpkin pie spice (only if not using the spice cake mix)
    1 c raisins (optional-additional calories)

Directions

Use a mixer and combine the dry cake mix with the pumpkin. Using a small cookie scoop, you can make 24 small muffins (not minis, but minis would work too). If you do less muffins, you increase calorie count. Doing small muffins at about 100 calories each, means you can feel like you are being bad and have 2, and only have eaten 200 calories. Not bad for a snack to hold you over to the next meal.
Bake at 350, takes between 15-20 muffins to cook
