Tuna Cabbage Casserole

Introduction

This is a nutritious, low in fat, high in fibre meal. Another bonus is it's inexpensive to make, one generally has all these ingredients on hand, and my husband even likes it.

Number of Servings: 2

Ingredients

    Cabbage, approximately 4 cups chopped
    1/2 cup milk..
    1/2 cup chopped onion
    salt and pepper to taste
    tuna in water, 1 can, drained.
    2 slices of fat free processed cheese
    2 slices of whole wheat reduced calorie bread

Directions

Preheat oven to 350 degrees. Place chopped cabbage in medium sauce pan. Cover with water.. Bring to a boil for about 5 minutes.
Meanwhile, measure milk into microwavable bowl. Heat for 1 minute. Add Onions, salt and pepper to mixture.
While milk is heating, whiz bread in blender to make crumbs.
Open can of tuna and drain.
Drain cabbage.
Spray a 1.5 litre loaf pan with pam cooking spray.
Place half of cabbage on bottom. Spread tuna over this, top with the rest of the cabbage. Pour milk mixture over this.. Place the two slices of cheese on top.. Sprinkle bread crumbs evenly.
Bake at 350 degrees (uncovered) for 25 minutes.
Remove from oven and let sit for 5 minutes before serving.
Makes 2 servings.
