Focaccia with Garlic and Olives

Introduction

Ingredients

    1 tsp. sugar
    1 package active dry yeast
    2/3 c. warm water
    9 oz. all purpose flour (2 c.), divided
    1/4 tsp.slat
    2 1/2 Tbps. olive oil, divided
    3 Tbsp. finely chopped kalamata olives
    Cooking spray
    4 garlic cloves, thinly sliced
    1/4 tsp. fleur de sel

Directions

Dissolve sugar and yeast in water in a large bowl and let stand 5 min.

combine 1 3/4 c. flour and salt. Stir with a whisk. Add lfour mixture and 1 Tbsp. of oil to yeast mixture, stirring to combine. Fold in olives. Knead until smooth and elastic (about 5 min.); add enough of remaining flour, 1 Tbsp. at a time, to prevent dough from sticking to hadns (dough will feel sticky.) Place dough in a large bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm place for 1 hour or until doubled in size. (Genly press two fingers into dough. If indentation remains, dough has risen enough.) Press dough out into a 13x8 in rectangle on a jelly-roll pan coated with cooking spray. Cover and let rise 30 min.

Preheat oven to 475.

Brush remaining 1 1/2 Tbsp. oil over dough. Sprinkle evenly with sliced garlic and 1/4 tsp. fleur de sel. Bake at 475 for 12 min. or until golden.
