Hungry Girl Eggplant Parm

Ingredients

    1 lg eggplant sliced lenghwise in 1/2" slices
    1/2 C eggwhites
    1 C fiber one cereal blended to crumbs
    1 C canned tomato sauce
    1 C ff shredded mozarella
    1/4 C reduced fat parmesan cheese (grated)
    1/2 t garlic powder
    1/4 t black pepper
    1/4 t salt
    (addition spices to your liking)



Directions

coat eggplant slices in egg white
dip in crumbs mixed with garlic, salt & pepper
bake on greased cookie sheet for 30 min
flip and bake an additional 10 min
place half of eggplant slices in bottom of 8"x8" casserole
layer 1/2 of sauce mozarella and parmesan cheese on top
place remaining eggplant slices over sauce and cheese layer
layer remaining sauce, mozarella and parmesan
cover with aluminum foil
bake for 25 minutes
serves 4
