Oatmeal Muffins

Introduction

This is an old recipe, it calls for 1 stick of oleo which shows how old it is. I have left this out and put in unsweeten applesauce in it place. The original recipe also calls for 1 cup of grandulated sugar and 1 cup of brown sugar which I cut in half. I did add a little salt but it wasn't called for so if you would prefer leave it out. Ingredients

    1 cup 3 minute Oatmeal
    1/2 cup applesauce
    2 eggs
    1 cup white flour
    1/2 cup whole wheat flour
    1/2 cup sugar
    1/2 cup brown sugar
    1/2 tsp cinnamon
    1 tsp baking soda
    1 tsp vanilla

Directions

In large bowl add Oatmeal add 1 1/2 cup of boiling water and 1/2 cup appllesauce, let stand about 5 minutes. Mix all dry ingredients together.
Add eggs to oatmeal mixture and then slowly add the dry ingredients. Will fill 18 muffin cups.
Cook at 350 for 20 min.
