Cranberry-mustard Pork roast

Introduction

Quick, easy, inexpensive crock pot supper. Tangy and low-fat. Even my 9yr old likes it. Quick, easy, inexpensive crock pot supper. Tangy and low-fat. Even my 9yr old likes it.
Number of Servings: 10

Ingredients

    Sauce:
    4Tbsp Dijon mustard
    3 Tbsp lemon juice
    3 Tbsp brown sugar
    1 can whole berry cranberry sauce

    2# pork loin roast, fat trimmed

Directions

Combine and stir ingredients for sauce. Place pork in slow cooker and pour sauce over and around.
Cook on low for 8-10 hrs, or high for 4-5 hrs.
Will be fall-apart tender when done.
2# roast makes about 10 servings.

  • My family decided that they want this for Christmas dinner instead of turkey. I made it with jellied sauce instead of whole-berry (it was what I had on hand), but it was still fabulous. In fact, the family might not have liked the whole-berry version. Love the simplicity as well as the flavor! - 12/3/10

  • Very good flavor and taste. I used some Hickory Farms Cranberry Mustard, just because I wanted to get rid of it but it was the same over all recipe. - 6/4/09
