Ingredients

Sauce:
4Tbsp Dijon mustard
3 Tbsp lemon juice
3 Tbsp brown sugar
1 can whole berry cranberry sauce
2# pork loin roast, fat trimmed
Directions
Combine and stir ingredients for sauce. Place pork in slow cooker and pour sauce over and around.
Cook on low for 8-10 hrs, or high for 4-5 hrs.
Will be fall-apart tender when done.

My family decided that they want this for Christmas dinner instead of turkey. I made it with jellied sauce instead of whole-berry (it was what I had on hand), but it was still fabulous. In fact, the family might not have liked the whole-berry version. Love the simplicity as well as the flavor! - 12/3/10
