Peach-Mustard Crusted Chicken

Ingredients

    4 boneless, skinless chicken breasts
    Mix next 3 ingredients together:
    1/4 cup Dijon mustard
    1/4 cup frozen peaches-thawed & mashed
    2 tbsp sugar free peach preserves
    Mix dry ingredients together:
    1/2 cup Panko bread crumbs
    1/2 cup finely chopped pecans
    1 tbsp dried parsley
    1/2 tsp salt
    1/2 tsp pepper
    Nonstick cooking spray

Directions

Mix mustard, peaches, preserves together. Put chicken and mixture together in a zip-loc bag. Marinate for 60 minutes or so.
Preheat oven to 375.
Combine remaining dry ingredients onto a plate.
Press chicken breasts into bread cumbs to coat. Place each breast on baking sheet that has been lightly sprayed with cooking spray. Bake in oven for 20 minutes or until thermometer registers 170 inserted in center of breast.
