Taco Style Lentils ~ Suzy's

Ingredients

    • 3/4 cup dry lentils
    • 3/4 cup brown rice
    • 4 cups cups of low-sodium vegetable broth
    • 1-medium onion, chopped
    • 2-cloves of garlic, minced
    • 1 tablespoon chili powder
    • 1 teaspoon cumin

Directions

(1) In a 2-quart saucepan spray with cooking spray and saute the onions and garlic until translucent.
(2) Add the broth and bring to a boil.
(3) Add the lentils, rice, chili powder, and cumin.
(4) Bring the whole thing to a nice fast boil.
(5) Reduce the heat to low.
(6) Place a lid on the lentils and allow the mixture to simmer for about 45 to 50 minutes. The water should be mostly absorbed by this time.
(7) You may serve this as is, topped with a little cheddar cheese and sour cream. Or you can use it to fill burritos or tacos or even (one of my favorite) make a nice taco salad with it :)

  • Great recipe! A little to salty for me so I will be cutting down on the bouillon cubes. I also added fresh garlic and I had onions, green peppers and onions left over from omelets so I added those. I guess that makes it for of fajita lentils :) - 11/13/07

  • This was SOOOO good! I wanted a lentil recipe with a lot of flavor (because lentils alone are pretty bland), and this was perfect. One-fourth of the recipe was only 3 WW points, and a very filling lunch. I ate it from a bowl, without cheese. I'll be making this again soon. - 11/8/07
