2/3c margarine 2/3c flour 7c skim milk 4 large potatoes 4 chopped green onions 1 1/4c shredded cheddar (2% milk kind) 1c reduced fat sour cream 1 tsp salt and pepper Bacon to taste
In dutch oven, melt margarine over medium heat. Whisk in flour until smooth. Stir in mlk and whisk constantly until thickened. Stir in potatoes and onions - bring to a boil. Reduce heat and simmer 10 minutes. Mix in bacon, cheese, sour cream, salt pepper as desired. Continue cooking, stirring frequently, until cheese is melted.
