Paprika Chicken

Ingredients

    Paprika, 2 tbsp
    Margarine, soft, 2 tsp
    4 boneless/skinless chicken drumsticks
    4 boneless/skinless chicken thighs
    Chicken Broth, 2 cups
    Onions, raw, 1 medium (diced)
    Water 1 cup
    1/4 tsp each salt & pepper
    Corn Starch 1 tablespoon
    Water 1 tablespoon

Directions

In a large pot or dutch oven, fry onions in margarine on medium high heat until translucent then add paprika, salt & pepper stiring until combined.

Add chicken pieces and brown slightly.

Add chicken broth & water. They should just cover chicken peices. If not, add a little more.

Reduce heat to medium low and simmer about 30 minutes or until chicken is done.

Remove chicken pieces and set aside.

Combine corn starch with 1 tablespoon cold water and pour into the pot with the chicken juices. Let simmer until thickened. You can add more cornstarch for a thicker gravy, or skip it if you just want juices.

Serve chicken over basmati rice and dress with the gravy.
