Becky's Zucchini Casserole

Introduction

Ingredients

    3 cups tomato sauce (low salt version)
    3 tablespoons minced parsley
    1/2 teaspoon basil
    1/2 teaspoon oregano
    1 crumbled bay leaf
    1-2 cloves garlic, minced
    3/4 pound sliced mozzarella cheese
    1/3 pound Parmesan cheese
    *Fried Zucchini*

    *Fried zucchini is take fresh zucchini, slice it, dip in egg, then in flour, then fry it in non-stick skillet that's been sprayed with non-stick spray oil.

Directions

First, fry your zucchini so it is ready to put your "lasagna" together!

1. Using 3 large zucchini, slice into 1/4" thick slices. Make an egg wash. Pat off moisture using paper toweling. Dip zucchini slices in egg wash, dust with flour.
2. Coat a nonstick skillet with spray oil. Heat to medium. Fry the zuchini to a light brown. Set aside.
3. Using a medium pan, mis toamto sauce, parsley, basil, oregano, bay leaf, and garlic. Simmer over medium heat for 15 minutes.
4. In a 2"x8"x12" pan, arrange alternate layers of fried zucchini, parmesan cheese, mozzarella cheese slices, and sauce. Make sure top layer is mozzarella.
5. Bake in a 350 degrees oven for 45 minutes.

This is so yummy! It tastes just like lasagna, but without the calories of pasta! This recipe can be frozen. It is very filling, and makes your house smell wonderful!
