Chicken and black bean soup

Ingredients

    4 C. homemade chicken stock w/meaty bits
    (or 32 oz canned chicken broth and 1 boneless breast)
    28 oz can tomatoes w/green chiles
    2 C. frozen corn
    1 can black beans
    16 oz bag McKenzie's Gumbo Vegetable Mix
    1 small onion, chopped
    1 green pepper, diced
    1 stalk celery, sliced
    1 clove garlic, minced
    1 carrot, sliced
    1 Tlb vegetable oil
    1/2 tsp cumin
    1/2 tsp salt
    1/4 tsp pepper

Directions

Saute celery, onion, garlic, green pepper and carrots in oil until softened. Add remaining ingredients, bring to boil, reduce to simmer. Simmer 30 minutes.
