Spicy Lentils & Rice

Introduction

This low calorie high in protien & fiber and can be used as a side dish or main dish. This low calorie high in protien & fiber and can be used as a side dish or main dish.
Number of Servings: 15

Ingredients

    2 Cups Brown Rice (uncooked)
    1 Cups Lentils (uncooked)
    1 Cans Tomatoes
    2.5 cups Celery
    2 Medium Onions
    2 Cups Chopped Green Peppers
    2.5 Cups Sliced Mushrooms
    Garlic
    Cayenne Pepper
    Curry
    Salt & Pepper

Directions

Rinse lentils
Add rice, lentils & veggies to a large cooking pot.
Cook until rice & veggies are tender. Add spices to taste.
This can also be cooked in a slow cooker.
Leftovers can be frozen.
Can be used as a side dish or main dish.
Makes about 15 cups 1 cup servings

    Sorry about that. You need to add 2 cups of water for every 1 cup of dried rice or lentils, I cut back a bit on the water (by about ½ cup) when using lots of veggies because as they cook down they will increase the liquid in this.
