4 c cooked whole wheat pasta
1/2 c fat free ricotta
1/2 c fat free cottage cheese
2 T chopped chives
1 T minced garlic (about 1 clove)
1/2 bag frozen mixed vegetables
salt and pepper
While pasta and veg cook: blend all other ingredients together in food processor or blender.
Toss all together. Voila! an easy dinner for 4
Could throw in left over turkey, chicken or shrimp but remember to add in additional calories.
