Fish and Tomato Stew

Ingredients

    Olive Oil, 1 tbsp (remove)
    Garlic, 1 clove (remove)
    Onions, raw, .5 medium (2-1/2" dia) (remove)
    Zucchini, 1 cup, sliced (remove)
    Carrots, raw, 1 large (7-1/4" to 8-1/2" long) (remove)
    Celery, raw, 2 stalk, large (11"-12" long) (remove)
    Ginger Root, 3 tsp (remove)
    *Tomato products, Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano, 3.5 serving (remove)
    Orange Roughy (fish), 7 oz (remove)
    Scallops, raw, 7 oz (remove)

Directions

Heat oil. Saute onion, carrot, celery, ginger, zucchini and jalapeno. Add tomato, spices, fish, scallops, and water. Reduce Heat and boil 7 -10 minutes.
