IntroductionI loved this recipe and it wasn't to spicy [as I'm not into hot]... I loved this recipe and it wasn't to spicy [as I'm not into hot]...
2 pounds frozen Spinach (chopped & drained)
1 Lrg. Vidalia Onion -cut into slices
15oz Tomato w/ Chilies (Ro Tel, canned)
8 Lrg. Eggs
2 cups Soymilk (Unsweetened)
4 cloves garlic
1 teaspoon mustard
1/4 teaspoon ginger [powder]
salt & pepper to taste
In mixing bowl: eggs, milk, & spices whisk to fully mix. Pour liquid over Spinach. Bake uncovered 45 to 65 minutes, or until browned, puffy & the center tests done. Let cool for 5-10 minutes before cutting into squares.
