Vegan Breakfast/Trail Bars

Introduction

Make your own healthy, cruelty free breakfast bars! Great to grab when you're on the go and short on time. They almost taste like a desert, but are healthy! They also make super trail bars! Make your own healthy, cruelty free breakfast bars! Great to grab when you're on the go and short on time. They almost taste like a desert, but are healthy! They also make super trail bars!
Number of Servings: 10

Ingredients

    2 medium sized bananas
    3/4 cup molasses
    1 tablespoon corn starch
    1 teaspoon vanilla
    1 cup whole wheat flour
    1 teaspoon cinnamon
    1/2 teaspoon baking soda
    1/2 teaspoon cloves
    generous handfuls of raisins, chopped walnuts, chopped pecans, sunflower seeds, chopped prunes, chopped almonds, or whatever else you may have at hand
    3 cups quick oats
    1/2 cup applesauce
    1/4 cup water

Directions

Heat oven to 350 degrees. Mix thoroughly the bananas, molasses, corn starch, applesauce, water and vanilla. Next, stir in the remaining ingredients, leaving the oats and seeds/nuts for last. Lightly spray a cookie sheet or pyrex with a nonstick vegetable spray (I use Trader Joe's olive oil spray myself) and cover it with the dough, which will be heavy and grainy. Bake for around 30 minutes, maybe more, and cut into cereal bars. Great with hot coffee or tea. Mmmm! Makes around 10 bars.
