Chicken in Wine Sauce

Ingredients

1 lb boneless, skinless chicken breasts cut in 4 oz pieces
2-3 tbsp flour
Salt and pepper to taste
4 tbsp margarine divided (2 and 2)
1/4 cup onion
1/4 lb mushrooms sliced
3 tbsp minced fresh parsley (can substitute dried if needed)
1 cup white wine
Directions
In medium skillet melt 2 tbsp margarine,
Mix flour, salt and pepper,
Dredge chicken pieces in flour mixture and cook until brown on both sides.
Push to side of skillet. Add 2 more tbsp margarine, saute onions and mushrooms until 1/2 done. Mix chicken and vegetables.
Add parsley.
Pour wine over everything and simmer covered for 20 minutes. Stir occasionally. If necessary can add water during cooking. Makes 4 4 oz servings.
You can add more chicken without increasing the other ingredients up to 1.5 lbs total.
Goes well either with white rice or Chicken flavored Rice-a-Roni.
