Introduction

In this recipe I use pineapple and orange, but you're more than welcome to be creative and use mango, passion fruit, or other tropical fruits! This makes a wonderful frozen treat for snack. Enjoy! Ingredients

    2 c. pineapple chunks, drained
    1/2 c. mandarin oranges, drained
    1/4 tsp. vanilla extract
    1.c fat free sugar free yogurt
    1c. fat free sugar free whipped topping

Directions

In a food processor or blender process pineapple, oranges, and vanilla until smooth. add yogurt, process briefly, just enough to mix. scrape down sides of bowl with a spatula. place in freezer for 30 mins.place bowl back on processor and pulse once to mix slightly; add whipped topping. pulse once or twice to incorporate. scrape the bowl sides again and pulse once or twice again. spoon evenly into 6 oz. custard bowls or fluted glasses. cover and freeze 1 to 2 hours or until firm. *Add shredded coconut for garnish*
