Super Easy Pumpkin Muffins

Introduction

Only two Ingredients to make these FABULOUS muffins! This receipe is from allrecipes.com. Ingredients

    1 15 oz. can Libby's Pure Pumpkin Puree
    1 18 oz. box Betty Crocker Super Moist Carrot Cake

Directions

Combine pumpkin and cake mix. Spoon into 12 cupcake liners and bake at 350 degrees for 20 -25 minutes. NOTE: The batter is very sticky and leaves a rough textured top on the muffins, but they're light and delicious. Makes 12 muffins.

    I love making this with the spice cake. I also sometimes make a frosting for it. Mix a packet of sugar free/fat free cheesecake flavored pudding with 1 cup skim milk until it starts to thicken slightly then add a small tub of cool whip free, stir to combine. So yummy! - 3/11/10

    I made this with spice cake mix, added vanilla chips and raisins and baked in 3 mini loaf pans - froze two of them for later. GREAT recipe and very tasty. - 4/20/09

    Duncan Hines has a "Decadent Carrot Cake" mix with dehydrated carrots and raisins. I used that along with adding a few walnuts...it was Fantastic! - 4/18/09

  • Made this for my reading club students. They ate them all, no leftovers for me!! I left a five at home and by the time I got home my husband had ate them all. Good thing I had one for breakfast. - 4/2/14

  • Made these with chocolate cake chocolate drops and dropped them on cookie sheet by large tablespoon full. Baked them for 15 min on 350. Excellant and chocolately. - 2/6/13

  • These were terrific! Followed the directions exactly. Baked in sprayed muffin pan and ended up with 17 muffins. Bought some whipped cream cheese frosting (50 cals/tbsp) and wow, did these hit the spot for my carrot cake craving! Thanks for the easy and delicious recipe! - 2/2/12

  • Oops-I didn't have a can of pumpkin so I used canned butternut squash and it came out fine. I did add a 1/4 cup of water and some dried apples. Yum! - 2/3/10

  • So easy and very moist and delicious. I used a devil's food cake mix because that was the recipe I saw first but bought a carrot cake mix, too. Because it just sounded like it would be good! I made mini muffins...it made 45~Not too sweet. My hubby loves them with his coffee. - 4/19/09
