Veggie Omelette

Introduction

Number of Servings: 3

Ingredients

    6 large eggs
    1 large scraped carrot
    1 cup mini bok choy
    1 stalk broccoki
    1 onion
    2 plum or italian tomatoes
    Dill to tast
    salt or Mrs. Dash salt substitute
    2 oz mixed mozarelli and cheddar cheese

Directions

Chop all the veggies and stir fry in non-stick pan.
Cook in Pam or 1 tsp canola oil
Set aside

Beat eggs in bowl.
Place enough mixture for 1 omelette
Let cook in covered pan on medium heat
When almost cooked, add cooked veggies on half of the circle of omelette
Add the cheese around the edge and fold remaining omelette over top.
Once cheese is melted remove from stove.
Note:
For a brunch you could add homemade homefries cooked with low fat.
