Introduction

This dish is great, but spicy. When chopping the jalapeno, use gloves and WASH YOU HANDS!! A LOT! I made the mistake of not throughly washing my hands and touched my eye. Ingredients

    3 oz Chicken breast, skineless
    1TBSP olive oil
    .5 TBSP crushed red pepper
    .5 cup chopped onion
    1 tsp ground cumin
    .25 jalapeno pepper, chopped
    .25 cup green pepper, chopped
    .25 tsp ground cinnamon
    1 TBSP reduced fat sour cream
    1 whole wheat tortilla

Directions

Thaw chicken. In a sauce pan heat olive oil. Add onions to oil and brown. Add chicken (cut or shredded) to pan with peppers and seasonings. Cook until chicken is done. Place chicken on torilla and add sour cream to help cut the heat. Enjoy!
