Pumpkin Bread Muffins

Introduction

Modified from a recipe by v monte from allrecipes.com to reduce the vegetable oil and replace some of the sugar with splenda. You could make additional substitutions, but I chose to do so in moderation. You could also add nuts, dried cranberries or chocolate chips. Yummy!

Number of Servings: 30

Ingredients

    2 1/4 cups all purpose flour
    1 cup whole wheat flour
    2 tsp baking soda
    2 tsp ground nutmeg
    2 cups solid pumpkin puree
    1/2 cup vegetable oil
    1/2 cup applesauce
    1 1/2 tsp salt
    1 tsp ground cinnamon
    2 cups white sugar
    1 cup splenda
    2/3 cup water
    4 eggs
    2 tsp vanilla

Directions

Preheat oven to 350 degrees. Mix all dry ingredients first, then add the remaining ingredients and stir well. Pour into lined muffin cups. Bake for approximately 20-22 minutes.
Makes 30 "regular" size muffins.
