Veggie Mango Curry

Introduction

The mango chutney is what makes this so tasty. Discovered the idea in a calorie counter book and have adapted it to suit. If you haven't got cauliflower, use broccoli or similar veggie (substitute value of approx 150 recipe calories) . Ingredients

    1 medium head of cauliflower (broken into small florets)
    2 medium onions, chopped
    2 stalks celery chopped
    1/2 cup red lentils
    1 can kidney beans (drained)
    3 tbsp good quality curry powder (quite spicy)
    400 grams raw potato (cubed)
    3 medium carrots (sliced)
    2 tbsp chopped fresh parsley
    3 tbsp mango chutney
    2 veggie stock cubes
    water

Directions

Spray nonstick onto skillet and brown onions and celery. Add chutney and curry and mix through until fragrant. Add remaining ingredients (except stock cubes), mix through until well covered in curry flavour. Then add enough water to "just" cover all ingredients, cover with lid, bring to boil and simmer on low heat until lentils and potatoes are well softened (stirring occasionally). About 10 minutes before it's finished, add dissolved/crushed stock cubes (this will enhance their flavour by not overcooking). Curry can be served immediately, but flavours are enhanced after a night in the fridge.
