Baked Chicken and Potato Dinner

Number of Servings: 6

Ingredients

    4 skinless boneless chicken breasts, cut in chunks
    2 medium unpeeled potatoes cut in 1-inch cubes
    1 green or red bell pepper, cut into 1-inch cubes
    1 cup of small/medium baby carrots
    1 medium onion, cut into 8 pieces
    1 tsp garlic powder
    1 tsp paprika
    1/4 cup grated Parmesan cheese

Directions

Preheat oven to 400. Pat chicken breasts dry with paper towel; divide into 4 piles and place chicken into corners of 13 x 9 baking dish/pan. Put veggies in the center of the dish/pan. Sprinkle with spices and cheese.

Cover with tin foil and bake, stirring vegs once halfway throught cooking time, for 40-50 mins or until juices run clear when chicken is pierced with a fork and vegs are tender.
